FSMA ensures that prevention is the cornerstone of our nation's food safety strategy and the sanitary transportation rule embodies that same principle. This rule establishes criteria for sanitary transportation practices, such as properly refrigerating food, adequately cleaning vehicles between loads, and properly protecting food during transportation. The rule applies to shippers, carriers, and receivers who transport food by motor or rail vehicle that will be consumed or distributed in the United States, including shippers located overseas. The rule is intended to ensure that persons engaged in the transportation of food that is at the greatest risk for contamination during transportation follow appropriate sanitary transportation practices.
Once effective, this rule will establish requirements for vehicles and transportation equipment, transport operations, information exchange procedures, training, records, and procedures by which FDA may waive these requirements.
